Textures are always interesting to experience. I am not thinking so much about the textures you feel on the skin of the body but those in your mouth. Recently I have heard a lot about Chia seeds. It is a texture that I enjoy! It brings back memories of being a kid and eating Jello. Putting the Jello in your mouth and then forcing it to squish through your teeth. I loved that feeling and now I have it again when I drink the chia seed drinks that are popular now. I have been taught that you can add them to juices and they will create that same texture after sitting in the juice for about 15 minutes.
Chia seeds are a great source of antioxidants. Seeds, in general, are supportive of the Kidney system in Chinese Medicine. We have a great seed recipe that we recommend at the Chinese Acupuncture Clinic. Dry fry ¼ cup of gold flax seeds with ¼ c of brown flax seeds. Pour them into a container to cool, then do the same with ¼ c each of black and white sesame seeds, and ¼ c. each of sunflower and pumpkin seeds. Mix them all together and they are great as a garnish on salads or cooked vegetables, or you can just eat them as a snack.
Seeds can surprise you because they grow all kinds of things. I worked with a class of adults with mental retardation and one spring we planted seeds for the first time. When the seeds came up, we harvested our produce and then took them inside and created food to eat. I will never forget the looks of satisfaction on the student’s faces as they ate food they had grown from seeds.
